Extra virgin olive oil

My wife Silvana and I (two Venetians with a streak of madness) embarked on this adventure during the springtime 2013 when, after having known and visited assiduously Apulia for over a decade, we decided to bet and invested in this wonderful land, and particularly in the olive tree, one of the most impressive monuments nature has ever created.

The original idea was to buy a small olive tree grove that could ensure the production of  high quality extra virgin olive oil intended for family use.

That’s why at the beginning we decided to label and name “Giovanni”, in memory of my father, the very first and few bottles of olive oil we produced.

What has been told so far is just the beginning of our story because folly took shape between the end of 2013 and the beginning of 2014 when in a very short time we realized that this agricultural business, in order to be well run, implied the acquisition of a range of equipment necessary for the correct and proper cultivation. To this end both to use equipment bought at its full potential and because we had been got caught up in the excitement, we decided to greatly enlarge our company.

Our Oil

Our olives which are harvested between the end of October and November are transferred to the historic olive oil mill of Serranova established thanks to the former agrarian reform, where in a few hours they are pressed by mechanical procedures carried out with cutting edge equipment.

The extra virgin oil extraction is obtained through a cold extraction in order to exalt at the most the product quality.

At this stage the oil is stored in stainless steel silos and is left to decant for a short period and hence without any filtering, in order to leave unaltered the product organoleptic and qualitative properties, we proceed to the packaging and from this moment on the oil it is ready to be served to the table and tasted.

Today our olive tree groves extend in the towns of Carovigno and Brindisi for a total surface area exceeding 60 hectares.

In our property there are currently about 100 monumental olive trees,  about 1500 ancient trees which are exclusively native cultivars namely Ogliarola Salentina and Cellina di Nardò, whereas around 3000 trees are relatively young, between 20 and 30 years old. Their varieties are: Leccino, Cima di Melfi, Frantoiana, Corantina and Picholine, varieties that are well established in the area.

From Treviso to Apulia

But this hasn’t absolutely changed our original intention: to obtain from our olive trees an high quality extra virgin olive oil and we commit ourselves to guaranteeing such a quality.

Today our olive tree groves extend in the towns of Carovigno and Brindisi for a total surface area exceeding 60 hectares.

In our property there are currently about 100 monumental olive trees,  about 1500 ancient trees which are exclusively native cultivars namely Ogliarola Salentina and Cellina di Nardò, whereas around 3000 trees are relatively young, between 20 and 30 years old. To make possible this challenge, stubbornness and belief were crucial, because it was not a single operation but the company that today has more than 60 hectares of land is the result of patient merger of more than 35 small and very small plots of land we acquired, each of them representing true stories experienced in the territory by the sellers’ fathers and grandfathers.

Each of these plots of land represents for us a new and different emotion.

In the past these small lands mentioned were portions of fiefs belonging to the Princes’ families who ruled the territory. In the early 50’ the Italian Government through a land reform put into effect expropriations and the lands were assigned to the farmers.

A municipality poster affixed on the streets of San Vito in October 1952 declaimed:

“On Sunday 19th inst. in this municipality will take place the handover ceremony concerning terrains already incorporate in their territories and assigned to the farmers of the municipalities of Carovigno and San Vito.

On the same day in the village of Serranova, where comfortable homes for hard-working peasant families will be built, the laying of the cornerstone will take place”.

In some of these lands mentioned even today there are some old trulli precisely where peasant families lived and worked the lands.

Today all of our plots are located in the production areas of Collina di Brindisi and Terra d’Otranto as established by the PDO (protected designation of origin)production’s technical policy, and some of these olive trees are located nearby the international natural oasis of Torre Guaceto, on a gently-sloping hill-side with a breathtaking sea view.

We are constantly and diligently present in person in the country to plan, check and verify the progress of all the work needed at various stages: from pruning, soil ploughing, preparation of farmyards, harvesting, pressing of olives and to the packaging of our olive oil “Giovanni”.

This is a 1000 km long story that was born in the Veneto and has materialized in Apulia, and this oil is the marriage between two distant hearts beating as one.
